The Meal Deal: Saturday 9/21 ~ Friday 9/27


Saturday 9/21: Sweet & Spicy Dr Pepper Pulled Pork Tacos
  • Add to Meal Rotation: Y
  • Picky Eater Notes: Trey & I both loved it.  Princess didn't eat it...probably too spicy for her anyway though.
  • Changes/Alterations: 
Sunday 9/22: Leftovers

Monday 9/23: 
Chili Macadamia Crusted Tilapia & Rice
  • Add to Meal Rotation: Y
  • Picky Eater Notes: Trey & I both enjoyed it.  At the end of the day, it's still fish so we won't be up late dreaming about it, but it was darn good for fish.
  • Changes/Alterations: The recipe called for 4 fish and we only needed 2.  I made the entire nut/seasoning/bread crumb mixture and saved half of it for later use.  Definitely worth doing this rather than trying to half the recipe.
Tuesday 9/24: Baked Cheddar Chicky Chimi's

  • Add to Meal Rotation: Y
  • Picky Eater Notes: Trey & I both liked it.  Too spicy for Brynn.
  • Changes/Alterations: Let me start by saying that I'm writing this review hunt-and-peck style while my stinging hand soaks in a bowl of milk.  Yes, I'm the moron whole deseeded and diced the jalapeño bare handed.  For next time, we've decided to skip the jalapeño (a little too spicy even for our taste) and substitute with pureed rotel.  It also took about 20 minutes before the chimis crisped up to our liking in the oven. Other than that, this was a keeper.
